The Role (Summary)
The Quality Assurance Officer is responsible for safeguarding the quality, safety, and consistency of all food products produced, dispatched, and delivered from Joud Coffee's central kitchen and across its restaurant operations. Acting as the frontline guardian of food safety, this role ensures that every product reaching the customer meets the brand’s defined quality standards and complies with applicable food safety regulations. The role also includes overseeing dispatch quality control processes, ensuring correct packaging, labeling, temperature compliance, order accuracy, and timely coordination with dispatch and logistics teams before products leave the facility.
What You’ll Do
· Conduct end-to-end quality checks across all production stages — from raw material receipt through preparation, portioning, packaging, and dispatch — including daily pre-dispatch sign-off to ensure no non-conforming product leaves the kitchen.
· Verify all dispatched products are correctly labelled per UAE standards, covering nutritional value, allergens, production date/time, expiry, and storage temperature.
· Monitor and verify portion weights, appearance, texture, and taste against approved product specifications.
· Oversee temperature monitoring and cold chain verification for chilled and frozen items during storage and dispatch; collaborate with logistics to ensure correct handling and delivery timelines.
· Ensure consistent application of GMP and HACCP principles; monitor CCPs and oPRPs daily, and immediately escalate deviations — initiating corrective actions and product holds as required.
· Assess hygiene and sanitation of kitchen equipment, surfaces, utensils, and food contact materials; validate that cleaning and disinfection schedules are executed correctly and at the required frequency.
· Conduct incoming goods inspections covering supplier delivery conditions, product freshness, packaging integrity, temperature compliance, and certificates of conformance; reject or quarantine non-conforming deliveries.
· Work with procurement to communicate quality expectations to suppliers and support periodic evaluation of supplier performance against quality KPIs.
· Design and deliver structured food safety induction programmes for all new kitchen and restaurant staff, with comprehension assessed before commencement of duties.
· Ensure full compliance with UAE food safety regulations (ADAFSA and Dubai Municipality) and maintain operational readiness for regulatory inspections at all times.
What We’re Looking For
Must have
· Minimum of 2 years of experience in F&B operations within the UAE, preferably in QSR, cafés, or food retail chains.
· BSc Degree in Food Technology, Food Science, Hotel Management or a related field.
· Strong interpersonal and problem-solving skills with measurable outcomes in quality improvements.
· Certification in Food Safety Management System, HACCP, or ISO 22000 is required.
· UAE-wide travel to outlets and flexible availability for off-hours support.
